Tasting notes
Pale lemon-green color with fine, persistent bubbles. Youthful, pure aroma of fresh green apple, pear, grape, and a hint of yeast. On the palate, a lively mousse emerges, with flavors of green herbs, citrus, and ripe pineapple, balanced by medium-high acidity. This gives a refreshing, pleasantly dry finish with hints of delicate citrus.
Bodegas Parató
The roots of Parató Cellar are found in Barcelona, near Sants. In the 17th century, the Elias family began growing grapes on the slopes of Montjuïc mountain. They also owned vineyards in the plains of “La Marina de Sants.” Owning their own press allowed them to produce and sell wine locally. However, the Spanish Civil War ended this tradition. The business was taken by the regime and the family was forced to flee.
After the war (1975), José Elías Andreu began rebuilding Parató Cellar. He first acquired Can Campmany, a 36-hectare estate. Today, Parató owns 94 hectares of vineyards, spread over four estates: Can Campmany, Can Respall de Renardes, La Fanga, and Camp Nou. The business grew out of love for the landscape, grape quality, and the desire to create exceptional wines.
Now led by the Elias Terns siblings, the winery continues under the family motto: “The best wines and cavas, exclusively from the best grapes from our own vineyards.” All wines have been organically certified since 2014.
